You might constantly be telling yourself to eat more veggies, but the fact remains that 90% of Americans don’t get the recommended 2-3 servings of vegetables per day. Vegetables are full of nutrients to keep your body healthy and they have plenty of fiber, which works to keep you fuller longer. Here are some creative ways to incorporate more veggies into your diet.
Add Vegetables to Your Breakfast
Starting your day off with vegetables can help you get them in early! For example, if you like eggs in the morning, try adding some spinach, broccoli, onions, and bell pepper to an omelet. You can also add carrots, spinach, and other leafy greens into your morning juice or smoothie.
Eat More Veggie Soup
Research has shown that people who eat soup during meals ingest fewer calories because soup naturally fills the stomach. And there are so many delicious veggie soups from which to choose.
Make It a Snack
Rather than snacking on potato chips, try carrots or cucumbers dipped in hummus or celery sticks dipped in peanut butter.
Turn Vegetables Into Noodles
Instead of traditional pasta, make noodles out of vegetables. Zucchini noodles (zoodles) are increasingly popular, but you can also use other veggies like carrots, turnips, or beets.
Try one of these tasty recipes: Shrimp Scampi Zoodles or Sweet Potato Carbonara.
Use Lettuce Instead of Bread
Cut down on calories and carbs by using lettuce instead of bread to make a wrap. Butter lettuce, cabbage leaves, kale, and Swiss chard are all great options.
Use Spaghetti Squash for Lasagna
When making lasagne, try using spaghetti squash instead of noodles.
