Healthy DIY Snack Recipes

An apple with peanut butter, celery with cream cheese, trail mix, and yogurt are healthy snacks – but sometimes we want a little more oomph in our mini meals. If you’ve grown bored of “the usual,” check out these delicious DIY snack recipes. They’ll definitely pique your interest and excite your taste buds!

Zucchini Pizza Bites

If you’re a fan of Bagel Bites, this recipe from Damn Delicious will blow your mind. It’s much tastier than the frozen version – and lower in calories! Plus, it is a great pre-game appetizer for Sunday football, family gatherings, or afternoon BBQs.

Ingredients:

  • 1 Tbsp olive oil
  • 3 zucchini, cut into ¼-inch thick rounds
  • Kosher salt
  • Freshly ground black pepper
  • ⅓ cup marinara sauce
  • ½ cup finely grated mozzarella
  • ¼ cup pepperoni minis
  • 1 Tbsp Italian seasoning

Instructions:

  1. Preheat oven to broil.
  2. Heat olive oil in a large skillet over medium-high heat. Working in batches, add zucchini and cook, flipping once until golden, 1-2 minutes on each side. Season with salt and pepper.
  3. Place zucchini on a large baking sheet. Top each round with marinara, mozzarella, and pepperoni.
  4. Place baking sheet in oven and cook until cheese has melted, 1-2 minutes.
  5. Serve immediately. Sprinkle Italian seasoning to taste.

Crunchy Chili-Spiced Chickpeas

Chickpeas can be a healthy, tasty snack if you cook them correctly. Check out this recipe from Delish. We bet you’ll be addicted to the spice and zest combination.

Ingredients:

  • 15 oz canned chickpeas, rinsed and drained
  • T Tbsp extra-virgin olive oil
  • 2 tsp chili powder
  • ¼ tsp kosher salt
  • Finely grated lemon zest

Instructions:

  1. Dry chickpeas with paper towels. In a medium bowl, toss chickpeas, oil, chili powder, and salt.
  2. Transfer chickpea mixture to an air-fryer basket, scraping bowl to get all the oil. Cook at 370° F until chickpeas are crispy and golden brown, 10-14 minutes.
  3. Serve chickpeas warm with lemon zest on top.

Cowboy Caviar

If you’re looking for an easy and healthy recipe, look no further than this “cowboy caviar” recipe from The Pioneer Woman (the only work to do here is chopping). Chow down with some tortilla chips, or make it even healthier with homemade potato chips or celery sticks.

Ingredients:

  • 15 oz canned black-eyed peas, drained and rinsed
  • 15 oz canned black beans, drained and rinsed
  • 1½ cups diced Roma tomatoes
  • 1 jalapeño pepper, chopped
  • 1 yellow bell pepper, chopped
  • ½ cup red onion, chopped
  • ¼ cup chopped cilantro
  • 3 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp Worcestershire sauce
  • ½ tsp seasoned salt
  • ½ tsp ground cumin
  • ½ tsp ground black pepper
  • Tortilla chips to serve

Instructions

  1. In a large mixing bowl, combine all ingredients thoroughly.
  2. Serve with tortilla chips.

Peanut Butter Cookies

For those with a sweet tooth, we haven’t forgotten about you. Healthy peanut butter cookies are here to the rescue. Check out this super-easy, four-ingredient recipe from Taste of Home.

Ingredients:

  • 1 large egg at room temperature, beaten
  • 1 cup creamy peanut butter
  • ¼ cup oat bran
  • ¼ cup maple syrup

Instructions:

  1. Preheat oven to 350° F. In a large bowl, mix ingredients together.
  2. Roll dough into small balls and place on ungreased baking sheet. Flatten with a fork.
  3. Bake 15 minutes and allow to cool before serving.

Froyo Fruit Cups

On a hot summer day, a nice cold and frozen snack hits the spot. But what healthy options are out there to choose from? Not many. That’s why we found this one from Tasty, composed of three fantastic ingredients: blueberries, raspberries, and Greek yogurt.

Ingredients:

  • 1 package blueberries
  • 1 package raspberries
  • 1½ cups vanilla Greek yogurt

Instructions:

  1.  Arrange 12 cupcake liners in a muffin tin.
  2. Using a spoon, dollop 2 Tbsp of yogurt into the bottom of each liner.
  3. Top yogurt with fresh blueberries and raspberries.
  4. Freeze for at least 2 hours.
  5. Remove cupcake liners before serving. Enjoy!
